The Jedi Knight is probably one of the toughest melee classes to fight. With their force leap and plethora of snares fighting one can be next to impossible for the Bounty Hunter. However some foreknowledge on their techniques goes a long way.
First off both the Sentinel and Guardian advanced classes are close in what they do. The Sentinel is focused on all out damage and can be identified by wielding two lightsabers. The Guardian is more tank focused and only uses a single lightsaber.
Both of them share some very powerful abilities. Force Leap is the first ability you'll usually see as they jump to your position rooting you in place. Guardians can also leap to friendly targets with Guardian Leap. Along with that Guardians can use Force Push to knock you back and gain another chance to Force Leap.
They also have a group Mez ability called Awe that will take you out of the fight until you take damage, so its advised not to cluster up on them as they will often use this when they are overwhelmed.
Both classes share one main stun ability Force Stasis that will lift you up in the air and do minimal damage to you while the Jedi Knight is channeling it. They have a plethora of snares to keep you in range. They both have a short cooldown interrupt that you should be aware of.
When fighting them you should also be aware of their emergency cooldowns.
Both advanced classes have access to Saber Ward.
Sentinels can use Guarded by the Force to become nigh invulnerable to damage so when you see your attacks doing single digit numbers just wait a few seconds for it to finish. They can also vanish for a short period with Force Camouflage, which is a perfect opportunity for you to outplay them with Stealth Scan.
Guardians have less extreme cooldowns that reduce damage taken such as Warding Call. Some specs of Guardians are immune to CC after they Force Leap up to 4 seconds. So don't waste your knockback on them.
Last but not least you should be aware that Sentinels have a group speed buff that requires 30 stacks of Centering, once they reach that they can use Transcendence to make the group run much faster.
My advice is to stay at range and to use knockbacks to create distance. When they start using cooldowns slow your damage and wait for their cooldowns to expire. Jedi Knights can be tough targets but they are no match for a skilled Bounty Hunter.
